Years ago the marble test was used as a measure of a water balance. Both the langelier index and the marble test are laboratory tests which can determine the degree of calcium carbonate saturation in the water at the treatment plant. Test the marble with water or mineral oil. Put a few drops of mineral oil or water on your counter and leave it for a few minutes 4 minutes for the water and 10 for the mineral oil.

Pour a bit of water on the counter. Perform a simple water test to see if your granite countertops need to be sealed.

Sealing your countertop is probably the best way to protect it but before sealing it you should make sure it needs to be sealed. This same test needs to be conducted for petroleum or oil based products you may use on a regular basis. Water which is just saturated with calcium carbonate or which is slightly supersaturated with calcium carbonate is considered stable and safe to release into the distribution system.
